Description

A cozy and simple dish combining rich creaminess and garlic flavor, all cooked in one pot.


Ingredients

Scale
  • 12 ounces fettuccine or penne pasta
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper, to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic. Cook until the onion gets soft and the garlic is fragrant.
  2. Stir in the uncooked pasta, mixing it with the cooked onion and garlic.
  3. Add the vegetable or chicken broth and bring to a boil. Once boiling, reduce heat to a simmer, cover, and cook until the pasta is tender (10–12 minutes).
  4. When the pasta is cooked, stir in the heavy cream and let it heat through.
  5. Mix in the Parmesan cheese until melted. Season with salt and pepper to taste.
  6. Dish into bowls and garnish with extra Parmesan and fresh herbs, if desired.

Notes

Always taste your pasta as it cooks to ensure it reaches your preferred level of doneness. For a lighter version, swap the heavy cream for half-and-half or plant-based cream.
