- 4 large Potatoes (Russet or Yukon Gold), diced
- 4 cloves Garlic, minced
- 1 large Onion, diced
- 4 cups Chicken or Vegetable Broth
- 1 cup Heavy Cream
- 2 tbsp Butter
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, melt butter over medium heat. Add onions and garlic, and sauté until translucent and fragrant, about 5 minutes.
- Add the diced potatoes and stir to combine, letting it soak in the flavors for another few minutes.
- Pour in the broth and bring to a simmer. Cover and cook until the potatoes are fork-tender, about 15-20 minutes.
- Remove from heat and blend the soup until smooth using an immersion blender.
- Return to low heat and stir in the cream. Adjust seasoning with salt and pepper to taste.
- Ladle into bowls and garnish as desired.
Notes
For a lighter option, substitute half-and-half for heavy cream. Experiment with toppings like chives or crispy bacon bits.
