Description

A creamy and dreamy potato soup infused with rich garlic flavors, perfect for chilly evenings.


Ingredients

Scale
  • 4 large Potatoes (Russet or Yukon Gold), diced
  • 4 cloves Garlic, minced
  • 1 large Onion, diced
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Heavy Cream
  • 2 tbsp Butter
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. In a large pot, melt butter over medium heat. Add onions and garlic, and sauté until translucent and fragrant, about 5 minutes.
  2. Add the diced potatoes and stir to combine, letting it soak in the flavors for another few minutes.
  3. Pour in the broth and bring to a simmer. Cover and cook until the potatoes are fork-tender, about 15-20 minutes.
  4. Remove from heat and blend the soup until smooth using an immersion blender.
  5. Return to low heat and stir in the cream. Adjust seasoning with salt and pepper to taste.
  6. Ladle into bowls and garnish as desired.

Notes

For a lighter option, substitute half-and-half for heavy cream. Experiment with toppings like chives or crispy bacon bits.
