Description

A cozy and heartwarming vegetarian soup made with tender potatoes, vibrant kale, and aromatic vegetables, perfect for chilly days.


Ingredients

  • 4 medium Potatoes, diced
  • 1 bunch Kale, chopped
  • 2 medium Carrots, chopped
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • Optional: A splash of Lemon Juice or a sprinkle of Red Pepper Flakes


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, stirring for about 3 minutes until soft and fragrant.
  2. Toss in the carrots and potatoes. Stir and let them cook for another 5 minutes.
  3. Add the vegetable broth and bring to a gentle boil. Season with salt and pepper.
  4. Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  5. Add the chopped kale to the pot and let it wilt down for about 5 minutes.
  6. Taste and adjust seasoning as needed, and if desired, add a squeeze of lemon juice.

Notes

For a creamier texture, consider blending a portion of the soup. This soup tastes even better the next day, so it’s great for meal prep.
