- 2 medium Carrots, chopped

- 3 cloves Garlic, minced
- 4 cups Vegetable Broth

- Salt and Pepper, to taste
- Optional: A splash of Lemon Juice or a sprinkle of Red Pepper Flakes
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, stirring for about 3 minutes until soft and fragrant.
- Toss in the carrots and potatoes. Stir and let them cook for another 5 minutes.
- Add the vegetable broth and bring to a gentle boil. Season with salt and pepper.
- Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- Add the chopped kale to the pot and let it wilt down for about 5 minutes.
- Taste and adjust seasoning as needed, and if desired, add a squeeze of lemon juice.
