Description

A cozy dinner that warms your soul, this Tender Crockpot Roast combines beef, veggies, and savory herbs for a comforting meal.


Ingredients

Scale
  • 1 Chuck Roast
  • 2 cups Beef Broth
  • 1 Onion, chopped
  • 4 cloves Garlic, minced
  • 3 Carrots, chopped
  • 2 Potatoes, chopped
  • 2 sprigs Rosemary
  • 2 sprigs Thyme
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Chop your onion, garlic, carrots, and potatoes into big, hearty pieces.
  2. Sear your chuck roast on all sides in a hot skillet until browned.
  3. Layer the chopped veggies on the bottom of your crockpot.
  4. Place the seared roast on top of the veggies.
  5. Mix beef broth with minced garlic, rosemary, thyme, salt, and pepper, then pour this mixture over the roast.
  6. Set your crockpot on low and cook for about 8-10 hours or until fork-tender.
  7. Transfer the roast to a cutting board, slice it, and serve with the veggies and gravy.

Notes

For best results, rest the meat for 10-15 minutes before slicing. Pair with mashed potatoes or a green salad.
