- 1 Chuck Roast
- 2 cups Beef Broth
- 1 Onion, chopped
- 4 cloves Garlic, minced
- 3 Carrots, chopped
- 2 Potatoes, chopped
- 2 sprigs Rosemary
- 2 sprigs Thyme
- Salt, to taste
- Pepper, to taste
Instructions
- Chop your onion, garlic, carrots, and potatoes into big, hearty pieces.
- Sear your chuck roast on all sides in a hot skillet until browned.
- Layer the chopped veggies on the bottom of your crockpot.
- Place the seared roast on top of the veggies.
- Mix beef broth with minced garlic, rosemary, thyme, salt, and pepper, then pour this mixture over the roast.
- Set your crockpot on low and cook for about 8-10 hours or until fork-tender.
- Transfer the roast to a cutting board, slice it, and serve with the veggies and gravy.
Notes
For best results, rest the meat for 10-15 minutes before slicing. Pair with mashed potatoes or a green salad.
