Description

A unique and healthier twist on traditional brownies, blending sweet potatoes with ripe bananas for a moist and fudgy treat.


Ingredients

  • 1 cup mashed sweet potatoes
  • 2 ripe bananas
  • 1/2 cup nut butter (almond or peanut butter)
  • 1/4 cup cocoa powder
  • 1 cup oats (or gluten-free oats)
  • 1/4 cup maple syrup or agave nectar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh sweet potatoes, peel, chop, and boil until soft. Drain and mash well.
  3. In a mixing bowl, combine mashed sweet potatoes and ripe bananas. Stir in nut butter, maple syrup, and cocoa powder until smooth.
  4. Add oats, baking soda, and salt. If desired, mix in chocolate chips.
  5. Spread the mixture evenly into a greased or lined 8×8 inch baking pan.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow cooling before cutting into squares.

Notes

Serve warmed with dairy-free ice cream or sprinkle with nuts or coconut flakes. These brownies improve in flavor when enjoyed the next day.
