- 1 cup mashed sweet potatoes
- 2 ripe bananas
- 1/2 cup nut butter (almond or peanut butter)
- 1/4 cup cocoa powder
- 1 cup oats (or gluten-free oats)
- 1/4 cup maple syrup or agave nectar
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- If using fresh sweet potatoes, peel, chop, and boil until soft. Drain and mash well.
- In a mixing bowl, combine mashed sweet potatoes and ripe bananas. Stir in nut butter, maple syrup, and cocoa powder until smooth.
- Add oats, baking soda, and salt. If desired, mix in chocolate chips.
- Spread the mixture evenly into a greased or lined 8×8 inch baking pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow cooling before cutting into squares.
Notes
Serve warmed with dairy-free ice cream or sprinkle with nuts or coconut flakes. These brownies improve in flavor when enjoyed the next day.
