Description

Crunchy, sweet, and aromatic roasted chickpeas coated in cinnamon sugar for a delightful snack.


Ingredients

  • 3 cups canned chickpeas (about 2 cans), drained and rinsed
  • 2 tablespoons olive oil
  • 1/4 cup granulated sugar (or coconut sugar/maple sugar)
  • 2 teaspoons ground cinnamon
  • Pinch of salt


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse the canned chickpeas.
  3. Dry the chickpeas on a kitchen towel to remove excess moisture.
  4. In a bowl, combine chickpeas with olive oil, sugar, cinnamon, and salt; toss to coat.
  5. Line a baking sheet with parchment paper and spread out the chickpeas in a single layer.
  6. Roast in the oven for 25-30 minutes, stirring halfway through.
  7. Let cool slightly before enjoying.

Notes

Make sure the chickpeas are completely dry before roasting to achieve the best crunch.
