Ingredients

- 1 lb sirloin or flank steak, cubed
- 1 cup long-grain white rice
- 1 cup queso cheese (queso blanco or cheddar)
- 1 bell pepper, chopped (green or red)
- 1 onion, chopped
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions and set aside.
- Cut steak into bite-sized cubes, season, and set aside.
- In a large skillet, heat olive oil, then sauté onions and bell peppers until soft.
- Push veggies aside and add steak cubes; cook until browned.
- Lower heat and stir in queso until melted and creamy.
- Fold in cooked rice until evenly mixed.
- Serve topped with cilantro or avocado.
