Description

A comforting meal packed with tender steak, creamy queso, and fluffy rice that brings flavor and satisfaction.


Ingredients

Scale
  • 1 lb sirloin or flank steak, cubed
  • 1 cup long-grain white rice
  • 1 cup queso cheese (queso blanco or cheddar)
  • 1 bell pepper, chopped (green or red)
  • 1 onion, chopped
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Cut steak into bite-sized cubes, season, and set aside.
  3. In a large skillet, heat olive oil, then sauté onions and bell peppers until soft.
  4. Push veggies aside and add steak cubes; cook until browned.
  5. Lower heat and stir in queso until melted and creamy.
  6. Fold in cooked rice until evenly mixed.
  7. Serve topped with cilantro or avocado.

Notes

Marinate the steak for extra flavor and don’t overcook to retain tenderness.
