- 2 3/4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 cup hard candies, crushed (like Jolly Ranchers)
Instructions
- Cream together the butter and sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla, mixing well.
- Sift together flour and salt, then slowly add to the wet mixture, stirring until just combined.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least one hour.
- Crush hard candies into small pieces, about pea-sized or smaller.
- Preheat oven to 350°F (175°C). Roll out chilled dough to about 1/4 inch thick and cut out shapes, making smaller cut-outs in the center.
- Place cookies on a parchment-lined baking sheet and fill the cut-outs with crushed candies.
- Bake for 10-12 minutes or until edges are lightly golden and candies are melted.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
