Description

Crispy, fluffy cornmeal dough balls that are a Southern comfort food staple, perfect for BBQs and seafood festivals.


Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 onion, diced (or green onions)
  • 1 cup buttermilk (or milk with vinegar)
  • 1 egg (or flax egg for egg-free)
  • Oil for frying (peanut or vegetable oil)


Instructions

  1. In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt.
  2. Mix in the diced onion, ensuring it’s evenly distributed.
  3. In a separate bowl, whisk together the buttermilk and egg until smooth.
  4. Pour the wet ingredients into the dry and stir until just combined.
  5. Heat about two inches of oil in a deep skillet or pot to 350°F (175°C).
  6. Drop spoonfuls of the mixture into the hot oil, frying until golden brown, about 3-4 minutes per batch.
  7. Use a slotted spoon to transfer the hush puppies to a plate lined with paper towels to drain.

Notes

Don’t overmix the batter; keep an eye on the oil temperature for the best results. Try adding jalapeños or cheese for a twist.
