Instructions
- In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt.
- Mix in the diced onion, ensuring it’s evenly distributed.
- In a separate bowl, whisk together the buttermilk and egg until smooth.
- Pour the wet ingredients into the dry and stir until just combined.
- Heat about two inches of oil in a deep skillet or pot to 350°F (175°C).
- Drop spoonfuls of the mixture into the hot oil, frying until golden brown, about 3-4 minutes per batch.
- Use a slotted spoon to transfer the hush puppies to a plate lined with paper towels to drain.
Notes
Don’t overmix the batter; keep an eye on the oil temperature for the best results. Try adding jalapeños or cheese for a twist.
