Description

Ingredients

  • 1 cup sourdough starter
  • 1 cup pumpkin puree
  • 1 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ½ tsp salt
  • 1 large egg
  • ⅓ cup oil or melted butter


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, brown sugar, baking powder, baking soda, spices, and salt. Set aside.
  3. In another bowl, mix the sourdough starter, pumpkin puree, egg, and oil until smooth.
  4. Slowly add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Grease your muffin tin or use paper liners. Divide the batter among the muffin cups, filling them about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack.
