- 1 cup sourdough starter
- 2 cups all-purpose flour
- 1 cup milk (or almond/oat milk)
- 1 tsp salt
- 2 tbsp honey (or sugar/maple syrup)
- 1 tsp baking soda
- 2 tbsp butter (or olive oil/coconut oil)
Instructions
- In a large bowl, mix the sourdough starter, milk, honey (or sugar), and melted butter until combined.
- Gradually add the all-purpose flour, salt, and baking soda, stirring until you have a shaggy dough.
- Transfer the dough to a floured surface and knead for 5 to 7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a towel, and let rise in a warm spot for 1 to 2 hours until it doubles in size.
- Punch down the dough and roll it out to about an inch thick, then cut out round shapes using a biscuit cutter or glass.
- Place the rounds on a parchment-lined baking sheet and cover them with a towel to let them rise for another hour.
- Heat a skillet over low to medium heat, lightly greased, and cook the muffins for 7 minutes on each side until golden brown.
- Let them cool on a wire rack for a few minutes before toasting and enjoying with your favorite spread.
Notes
For a stronger sourdough flavor, let the dough rise longer. If the dough is sticky, sprinkle in more flour as needed.
