Description

Crunchy on the outside and soft on the inside, these Sourdough Discard Pretzel Bites are the perfect snack to reduce food waste from sourdough baking.


Ingredients

Scale
  • 1 cup sourdough discard
  • 1/2 cup warm water
  • 2 tablespoons oil
  • 1 teaspoon salt
  • 1 tablespoon baking soda
  • 2 cups all-purpose flour


Instructions

  1. In a bowl, combine the sourdough discard, warm water, and oil. Stir till mixed.
  2. Gradually mix in the salt, baking soda, and flour. Stir until it forms a dough.
  3. On a floured surface, knead the dough for about 5 minutes.
  4. Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rest for about 30 minutes.
  5. Roll the dough into long ropes and cut them into bite-sized pieces.
  6. Prepare a pot of boiling water with baking soda and drop the bites in for about 30 seconds.
  7. Place the bites on a baking sheet lined with parchment paper. Brush them with oil and sprinkle with salt.
  8. Bake at 425°F for about 15 minutes until golden brown.
  9. Allow to cool slightly before serving.

Notes

For a twist, try different toppings like sesame seeds or garlic salt.
