- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- ¾ cup unsulfured molasses
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
- In a separate bowl, beat the butter, brown sugar, and granulated sugar until fluffy.
- Mix in the molasses and egg until well combined.
- Gradually add the dry ingredient mix to the wet ingredients, stirring until just combined. Don’t overmix!
- Cover the bowl with plastic wrap and chill the dough in the fridge for about 30 minutes.
- Roll the dough into 1-inch balls, then flatten slightly before placing on the baking sheet.
- Bake for 8-10 minutes until the edges are slightly firm but the centers are still soft.
- Let them sit on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough for the best flavor and texture. Avoid overbaking to keep the cookies soft.
