Description

Delightfully soft and chewy gingerbread men cookies, perfect for decorating or enjoying on their own, filled with warm holiday flavors.


Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ¾ cup unsulfured molasses
  • 1 large egg


Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, beat the butter, brown sugar, and granulated sugar until fluffy.
  4. Mix in the molasses and egg until well combined.
  5. Gradually add the dry ingredient mix to the wet ingredients, stirring until just combined. Don’t overmix!
  6. Cover the bowl with plastic wrap and chill the dough in the fridge for about 30 minutes.
  7. Roll the dough into 1-inch balls, then flatten slightly before placing on the baking sheet.
  8. Bake for 8-10 minutes until the edges are slightly firm but the centers are still soft.
  9. Let them sit on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for the best flavor and texture. Avoid overbaking to keep the cookies soft.
