Description

Delicious s’mores cookie bars combining gooey marshmallows, rich chocolate, and crunchy graham crackers into a fun and easy treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • Salt, a pinch
  • 1 cup chocolate chips (semi-sweet or milk)
  • 2 cups marshmallows (mini or regular)
  • 1 cup graham cracker crumbs


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9×13 inch baking dish with parchment paper.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until creamy.
  4. Beat in the eggs one at a time and stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Spread half of the cookie dough into the prepared baking dish.
  8. Sprinkle the marshmallows over the dough, followed by the graham cracker crumbs.
  9. Dollop the remaining cookie dough on top.
  10. Bake for 25 to 30 minutes, until edges are golden.
  11. Let cool before slicing into squares.

Notes

Serve warm with a scoop of vanilla ice cream and drizzle with chocolate or caramel sauce.
