Delicious s’mores cookie bars combining gooey marshmallows, rich chocolate, and crunchy graham crackers into a fun and easy treat.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- Salt, a pinch
- 1 cup chocolate chips (semi-sweet or milk)
- 2 cups marshmallows (mini or regular)
- 1 cup graham cracker crumbs
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 9×13 inch baking dish with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until creamy.
- Beat in the eggs one at a time and stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients until just combined.
- Fold in the chocolate chips.
- Spread half of the cookie dough into the prepared baking dish.
- Sprinkle the marshmallows over the dough, followed by the graham cracker crumbs.
- Dollop the remaining cookie dough on top.
- Bake for 25 to 30 minutes, until edges are golden.
- Let cool before slicing into squares.
Notes
Serve warm with a scoop of vanilla ice cream and drizzle with chocolate or caramel sauce.
