- 4 Chicken Thighs
- 1/4 cup Lemon Juice
- 3 cloves Garlic, minced
- 1/4 cup Fresh Parsley, chopped
- 1 tsp Fresh Thyme (or 1/2 tsp dried)
- 1 cup Chicken Broth (or vegetable broth)
- 1 cup Long-grain Rice
- Salt, to taste
- Pepper, to taste
Instructions
- Season the chicken thighs with salt and pepper and place them at the bottom of the slow cooker.
- In a bowl, whisk together lemon juice, minced garlic, chopped parsley, thyme, and chicken broth. Pour this mixture over the chicken.
- Spread rice evenly over the chicken.
- Cover and cook on low for about 360 minutes (6 hours) or high for 180 minutes (3 hours).
- Once done, fluff the rice with a fork and serve the chicken on top.
Notes
For added creaminess, consider mixing in a dollop of sour cream before serving. Customize by adding vegetables like carrots or potatoes.
