Description

Ingredients

  • 4 Chicken Thighs
  • 1/4 cup Lemon Juice
  • 3 cloves Garlic, minced
  • 1/4 cup Fresh Parsley, chopped
  • 1 tsp Fresh Thyme (or 1/2 tsp dried)
  • 1 cup Chicken Broth (or vegetable broth)
  • 1 cup Long-grain Rice
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Season the chicken thighs with salt and pepper and place them at the bottom of the slow cooker.
  2. In a bowl, whisk together lemon juice, minced garlic, chopped parsley, thyme, and chicken broth. Pour this mixture over the chicken.
  3. Spread rice evenly over the chicken.
  4. Cover and cook on low for about 360 minutes (6 hours) or high for 180 minutes (3 hours).
  5. Once done, fluff the rice with a fork and serve the chicken on top.

Notes

For added creaminess, consider mixing in a dollop of sour cream before serving. Customize by adding vegetables like carrots or potatoes.
