Description

A heartwarming comfort food dish featuring a creamy chicken filling topped with flaky biscuits, perfect for cozy dinners.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 can cream of chicken soup
  • 2 cups biscuit mix
  • 3/4 cup milk
  • Salt, to taste
  • Pepper, to taste
  • Thyme or rosemary, optional


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix shredded chicken, frozen vegetables, and cream of chicken soup. Add seasonings and stir until well-coated.
  3. Pour the filling into a greased 9-inch pie dish, spreading it evenly.
  4. In a separate bowl, combine biscuit mix with milk, stirring until just combined.
  5. Scoop spoonfuls of the biscuit dough on top of the chicken filling.
  6. Bake for 25-30 minutes, or until biscuits are golden brown and filling is bubbling.
  7. Cool for a few minutes before serving.

Notes

Use leftover or rotisserie chicken for convenience. Season the filling well. If the biscuits brown too quickly, cover loosely with foil.
