- 2 cups cooked chicken, shredded or diced
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1 can cream of chicken soup
- 2 cups biscuit mix
- 3/4 cup milk
- Salt, to taste
- Pepper, to taste
- Thyme or rosemary, optional
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix shredded chicken, frozen vegetables, and cream of chicken soup. Add seasonings and stir until well-coated.
- Pour the filling into a greased 9-inch pie dish, spreading it evenly.
- In a separate bowl, combine biscuit mix with milk, stirring until just combined.
- Scoop spoonfuls of the biscuit dough on top of the chicken filling.
- Bake for 25-30 minutes, or until biscuits are golden brown and filling is bubbling.
- Cool for a few minutes before serving.
Notes
Use leftover or rotisserie chicken for convenience. Season the filling well. If the biscuits brown too quickly, cover loosely with foil.
