- 1 lb Brussels sprouts, halved
- 3 tbsp balsamic vinegar
- 1 tbsp honey (or maple syrup for vegan)
- Zest of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Trim the ends off the Brussels sprouts, remove yellow leaves, and cut in half.
- In a large bowl, combine halved Brussels sprouts, olive oil, salt, and pepper. Toss until coated.
- Spread on a baking sheet in a single layer and roast for 20-25 minutes, tossing halfway.
- Drizzle balsamic vinegar and honey mixture over the sprouts, then add lemon zest.
- Toss before serving and enjoy!
Notes
For even cooking, cut Brussels sprouts into similar sizes. Avoid crowding the pan while roasting.
