- 1 lb boneless, skinless chicken breast or thighs
- 3 tablespoons butter (or ghee)
- 1 medium onion, chopped finely
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced (or ginger paste)
- 1 cup tomato puree (or crushed tomatoes)
- 1/2 cup heavy cream (or coconut milk)
- 1 teaspoon garam masala
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- Salt to taste
Instructions
- In a large skillet, melt the butter over medium heat. Toss in the chicken pieces and cook until golden brown on all sides. Remove from skillet and set aside.
- Add the chopped onion to the same skillet and cook until soft and translucent, about 5-7 minutes.
- Stir in the minced garlic and ginger and let cook for about a minute until fragrant.
- Add garam masala, cumin, coriander, and turmeric, stirring to coat the veggies in spices.
- Pour in the tomato puree and stir to combine. Let simmer for about 5 minutes.
- Return the cooked chicken to the skillet and mix well.
- Add the heavy cream and simmer for an additional 5-10 minutes until thickened to your preference.
- Season with salt to taste, and serve.
Notes
For a vegetarian twist, substitute chicken with tofu. Serve with rice or naan for the best experience.
