- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 8 oz cream cheese
- 1/2 cup sun-dried tomatoes
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Make a pocket in each chicken breast.
- In a bowl, mix spinach, cream cheese, sun-dried tomatoes, garlic, Parmesan cheese, and Italian seasoning.
- Stuff each chicken breast pocket with the stuffing mixture and secure with toothpicks if needed.
- Heat olive oil in a pan over medium-high heat and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes, or until cooked through and juices run clear.
- Let the chicken rest for a few minutes, then slice and serve.
