Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 8 oz cream cheese
  • 1/2 cup sun-dried tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil


Instructions

  1. Preheat your oven to 375°F (190°C). Make a pocket in each chicken breast.
  2. In a bowl, mix spinach, cream cheese, sun-dried tomatoes, garlic, Parmesan cheese, and Italian seasoning.
  3. Stuff each chicken breast pocket with the stuffing mixture and secure with toothpicks if needed.
  4. Heat olive oil in a pan over medium-high heat and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until cooked through and juices run clear.
  6. Let the chicken rest for a few minutes, then slice and serve.
