- 1 cup pumpkin puree
- 1 cup granulated sugar
- ½ cup vegetable oil
- 2 large eggs

Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the pumpkin puree, sugar, and vegetable oil until smooth. Add eggs and beat well.
- In another bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
- Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cake cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For extra flavor, use fresh ground spices. Serve with whipped cream or caramel sauce for a delicious twist.
