Description

A moist and flavorful cake combining pumpkin and cozy spices, perfect for fall gatherings or a cozy night in.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • ¼ tsp salt


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9×13 inch baking pan.
  3. In a large bowl, whisk together the pumpkin puree, sugar, and vegetable oil until smooth. Add eggs and beat well.
  4. In another bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet mixture, stirring gently until just combined.
  6. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Let cake cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For extra flavor, use fresh ground spices. Serve with whipped cream or caramel sauce for a delicious twist.
