Ingredients

- 1 can Pumpkin Puree (or fresh pumpkin)
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Vegetable Broth (or Chicken Broth)
- 1 cup Heavy Cream (or Coconut Milk)
- 2 tablespoons Fresh Sage, chopped (or dried sage)
- 2 tablespoons Olive Oil
- Salt and Pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until tender and fragrant.
- Stir in pumpkin puree and vegetable broth. Bring to a gentle simmer and let meld for about 10 minutes.
- Toss in chopped fresh sage and allow the aroma to fill the kitchen.
- Use an immersion blender to puree the soup until completely smooth, or carefully transfer to a blender in batches.
- Return the bisque to the pot (if using a blender) and stir in the heavy cream. Heat for a few minutes while stirring.
- Season with salt and pepper to taste and serve hot in bowls.
Notes
For a lighter version, substitute heavy cream with coconut or almond milk. Adjust consistency by adding more broth for a thinner soup. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
