- 1 tsp pumpkin spice

- 1 cup granulated sugar
- 1 cup pumpkin puree
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- Cream cheese frosting (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Line a cupcake tray with cupcake liners.
- In a bowl, whisk together the flour, baking powder, baking soda, pumpkin spice, and salt.
- In another bowl, whisk together the sugar, pumpkin puree, eggs, vegetable oil, and vanilla until smooth.
- Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Spoon the batter into the liners, filling them about two-thirds full.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a cooling rack.
- Top with cream cheese frosting if desired.
Notes
Use pure pumpkin puree for the best flavor. Don’t over-mix the batter to keep cupcakes light and fluffy.
