Description

Deliciously moist Pumpkin Cupcakes flavored with warm spices, perfect for fall gatherings or cozy nights in.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp pumpkin spice
  • ½ tsp salt
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • Cream cheese frosting (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a cupcake tray with cupcake liners.
  3. In a bowl, whisk together the flour, baking powder, baking soda, pumpkin spice, and salt.
  4. In another bowl, whisk together the sugar, pumpkin puree, eggs, vegetable oil, and vanilla until smooth.
  5. Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. Spoon the batter into the liners, filling them about two-thirds full.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a cooling rack.
  9. Top with cream cheese frosting if desired.

Notes

Use pure pumpkin puree for the best flavor. Don’t over-mix the batter to keep cupcakes light and fluffy.
