Description

Delightful no-bake treats made from crushed pineapple, cream cheese, and coconut, rolled into bite-size morsels.


Ingredients

  • 1 cup crushed pineapple, well-drained
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tsp vanilla extract


Instructions

  1. In a medium bowl, combine the drained crushed pineapple, softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth.
  2. Gently fold in the shredded coconut and chopped nuts until just integrated.
  3. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  4. Scoop out a tablespoon of the mixture and roll it into a ball. Repeat until all mixture is used.
  5. Roll each ball in additional shredded coconut or finely chopped nuts before serving.

Notes

Drain the pineapple thoroughly to avoid a watery mixture. Store in an airtight container in the refrigerator for up to 7 days.
