Delightful no-bake treats made from crushed pineapple, cream cheese, and coconut, rolled into bite-size morsels.

- 1 cup crushed pineapple, well-drained
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup shredded coconut
- 1/2 cup chopped walnuts or pecans (optional)
- 1 tsp vanilla extract
Instructions
- In a medium bowl, combine the drained crushed pineapple, softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth.
- Gently fold in the shredded coconut and chopped nuts until just integrated.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- Scoop out a tablespoon of the mixture and roll it into a ball. Repeat until all mixture is used.
- Roll each ball in additional shredded coconut or finely chopped nuts before serving.
Notes
Drain the pineapple thoroughly to avoid a watery mixture. Store in an airtight container in the refrigerator for up to 7 days.
