Description

A delightful and moist bread bursting with tropical pineapple flavor, perfect for breakfast or a snack.


Ingredients

  • 1 cup fresh pineapple, chopped (or canned, drained)
  • 2 cups all-purpose flour (or spelt flour)
  • 1 cup sugar (or brown sugar)
  • 1 tsp baking soda
  • 2 large eggs
  • 1/2 cup vegetable oil (or coconut oil)
  • 1 tsp vanilla extract (or almond extract)
  • 1 tsp cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a loaf pan with oil or butter.
  3. In a bowl, mix together flour, sugar, baking soda, and cinnamon.
  4. In another bowl, whisk together eggs, oil, and vanilla extract.
  5. Chop the pineapple into small chunks.
  6. Combine the wet mixture with the dry ingredients and fold in the pineapple chunks gently.
  7. Pour the batter into the prepared pan and bake for 50-60 minutes, until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

Serve with butter, cream cheese, or as part of a fruit salad. For added flavor, drizzle with honey or sprinkle with powdered sugar.
