Ingredients

- 1 cup fresh pineapple, chopped (or canned, drained)
- 2 cups all-purpose flour (or spelt flour)
- 1 cup sugar (or brown sugar)
- 1 tsp baking soda
- 2 large eggs
- 1/2 cup vegetable oil (or coconut oil)
- 1 tsp vanilla extract (or almond extract)
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a loaf pan with oil or butter.
- In a bowl, mix together flour, sugar, baking soda, and cinnamon.
- In another bowl, whisk together eggs, oil, and vanilla extract.
- Chop the pineapple into small chunks.
- Combine the wet mixture with the dry ingredients and fold in the pineapple chunks gently.
- Pour the batter into the prepared pan and bake for 50-60 minutes, until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
Serve with butter, cream cheese, or as part of a fruit salad. For added flavor, drizzle with honey or sprinkle with powdered sugar.
