- 1 lb ground chicken
- 1 head butter or iceberg lettuce
- 1 cup chopped mushrooms
- 1 large carrot, grated
- 1 cup water chestnuts, chopped
- 3 scallions, sliced
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sesame oil
Instructions
- In a large skillet over medium-high heat, cook the ground chicken until browned, breaking it up as it cooks.
- Add the chopped mushrooms, grated carrot, and water chestnuts, cooking until the mushrooms are tender.
- Stir in the soy sauce, hoisin sauce, and sesame oil, allowing it to bubble for a minute.
- Add sliced scallions and mix well. Remove from heat.
- Separate the lettuce leaves to form cups.
- Spoon the chicken mixture into each lettuce cup and serve with extra sauce on the side if desired.
Notes
For extra crunch, top with crushed peanuts or drizzle with additional hoisin sauce.
