Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup butter, melted
  • 2 large eggs
  • 3/4 cup milk
  • 1 cup chopped pecans


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or lightly grease it.
  2. In a large bowl, mix together flour, brown sugar, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, whisk together melted butter, eggs, and milk until nice and smooth.
  4. Slowly pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix – lumps are okay!
  5. Gently fold in the chopped pecans into the batter.
  6. Scoop the batter into your prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool in the tin for about five minutes before transferring them to a wire rack.

Notes

For a flavor twist, try adding toasted pecans or chocolate chips. These muffins can be made ahead of time and frozen for later enjoyment.
