- 2 cups all-purpose flour
- 1 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup butter, melted
- 2 large eggs
- 3/4 cup milk
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners or lightly grease it.
- In a large bowl, mix together flour, brown sugar, baking powder, salt, and cinnamon until well combined.
- In another bowl, whisk together melted butter, eggs, and milk until nice and smooth.
- Slowly pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix – lumps are okay!
- Gently fold in the chopped pecans into the batter.
- Scoop the batter into your prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the tin for about five minutes before transferring them to a wire rack.
Notes
For a flavor twist, try adding toasted pecans or chocolate chips. These muffins can be made ahead of time and frozen for later enjoyment.
