Ingredients

- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup orzo pasta
- 4 cups chicken broth
- 2 tablespoons olive oil
- 2 medium carrots, diced
- 1 stalk celery, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups spinach, chopped
- Salt and pepper, to taste
- Dried Italian herbs, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken pieces, season with salt, pepper, and herbs, and cook until lightly browned. Remove from pot and set aside.
- In the same pot, add onions, carrots, and celery. Sauté for 5-7 minutes until softened. Add garlic and cook for another minute.
- Pour in chicken broth and bring to a boil. Add orzo and stir, allowing it to soak up the flavors.
- Return chicken to the pot, reduce heat, cover, and let simmer for about 10 minutes, or until orzo is tender.
- Stir in spinach until wilted. Serve in bowls, optionally topped with parsley.
Notes
Don’t overcook the orzo; it should be al dente. You can add extra veggies like peas or bell peppers, and for heat, include red pepper flakes when sautéing.
