Description

A cozy comfort dish combining tender chicken, flavorful orzo, and vibrant veggies, all cooked in one pot.


Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 medium carrots, diced
  • 1 stalk celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups spinach, chopped
  • Salt and pepper, to taste
  • Dried Italian herbs, to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces, season with salt, pepper, and herbs, and cook until lightly browned. Remove from pot and set aside.
  2. In the same pot, add onions, carrots, and celery. Sauté for 5-7 minutes until softened. Add garlic and cook for another minute.
  3. Pour in chicken broth and bring to a boil. Add orzo and stir, allowing it to soak up the flavors.
  4. Return chicken to the pot, reduce heat, cover, and let simmer for about 10 minutes, or until orzo is tender.
  5. Stir in spinach until wilted. Serve in bowls, optionally topped with parsley.

Notes

Don’t overcook the orzo; it should be al dente. You can add extra veggies like peas or bell peppers, and for heat, include red pepper flakes when sautéing.
