Description

Delightful baked muffins combining the sweetness of strawberries and zesty oranges, topped with a crunchy streusel.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup whole milk
  • 1 cup strawberries, diced
  • 1 tbsp orange zest
  • Streusel topping: 1/4 cup brown sugar, 1/4 cup flour, 2 tbsp butter, 1/2 tsp cinnamon


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  3. In another bowl, cream the butter until soft, then beat in the eggs one at a time. Add the milk and orange zest next.
  4. Slowly fold the wet ingredients into the dry mix until just combined. Don’t overmix!
  5. Gently fold in the strawberries.
  6. In a small bowl, mix together the streusel ingredients until crumbly.
  7. Scoop the batter into each muffin cup, filling them about two-thirds full, and sprinkle the streusel on top.
  8. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  9. Cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Use fresh strawberries for the best texture. Optionally, add blueberries for extra color!
