Delightful baked muffins combining the sweetness of strawberries and zesty oranges, topped with a crunchy streusel.
Ingredients

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup whole milk
- 1 cup strawberries, diced
- 1 tbsp orange zest
- Streusel topping: 1/4 cup brown sugar, 1/4 cup flour, 2 tbsp butter, 1/2 tsp cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- In another bowl, cream the butter until soft, then beat in the eggs one at a time. Add the milk and orange zest next.
- Slowly fold the wet ingredients into the dry mix until just combined. Don’t overmix!
- Gently fold in the strawberries.
- In a small bowl, mix together the streusel ingredients until crumbly.
- Scoop the batter into each muffin cup, filling them about two-thirds full, and sprinkle the streusel on top.
- Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
- Cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Use fresh strawberries for the best texture. Optionally, add blueberries for extra color!
