Description

A cozy and delicious one-pot meal featuring creamy pasta, tender chicken, and rich Italian flavors.


Ingredients

  • 8 oz short pasta (penne or fusilli)
  • 1 lb boneless, skinless chicken breast, diced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp Italian seasoning
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup mozzarella cheese, shredded


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt and pepper, and sauté until golden brown. Remove and set aside.
  2. In the same pot, add minced garlic and cook until fragrant, about 1 minute.
  3. Add pasta, chicken broth, crushed tomatoes, and Italian seasoning. Stir well to ensure pasta is submerged.
  4. Bring to a gentle boil, then reduce heat and let simmer for about 15 minutes, stirring occasionally.
  5. Once pasta is cooked, stir in heavy cream and half of the Parmesan cheese until creamy.
  6. Remove from heat and sprinkle remaining Parmesan and mozzarella on top. Cover until cheese melts.
  7. Serve in bowls, garnished with fresh herbs if desired.

Notes

Use freshly grated cheese for better melting. Stir often while cooking to prevent sticking.
