- 8 oz short pasta (penne or fusilli)
- 1 lb boneless, skinless chicken breast, diced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can (14 oz) crushed tomatoes
- 1 tsp Italian seasoning
- 1/2 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 cup mozzarella cheese, shredded
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt and pepper, and sauté until golden brown. Remove and set aside.
- In the same pot, add minced garlic and cook until fragrant, about 1 minute.
- Add pasta, chicken broth, crushed tomatoes, and Italian seasoning. Stir well to ensure pasta is submerged.
- Bring to a gentle boil, then reduce heat and let simmer for about 15 minutes, stirring occasionally.
- Once pasta is cooked, stir in heavy cream and half of the Parmesan cheese until creamy.
- Remove from heat and sprinkle remaining Parmesan and mozzarella on top. Cover until cheese melts.
- Serve in bowls, garnished with fresh herbs if desired.
Notes
Use freshly grated cheese for better melting. Stir often while cooking to prevent sticking.
