Description

Ingredients

  • 2 carrots, diced
  • 1 zucchini, diced
  • 2 stalks of celery, diced
  • 2 cups of spinach, packed
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 tablespoon olive oil


Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat. Add finely chopped onions and minced garlic, and cook until fragrant.
  2. Toss in diced carrots and celery, stirring often for about five minutes until they start to soften.
  3. Pour in your vegetable broth and bring it to a gentle boil.
  4. Add diced zucchini and packed spinach. Let it simmer for about 10 minutes until all veggies are tender.
  5. Season with salt, pepper, and your favorite herbs. A pinch of thyme or rosemary works wonders!
