Description

Delightful no-bake cookies made with shredded coconut, rolled oats, and your choice of nut butter, perfect for quick snacks or desserts.


Ingredients

  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup rolled oats
  • 1/2 cup peanut butter (or almond butter)
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Line a baking tray with parchment paper.
  2. In a large bowl, combine shredded coconut, rolled oats, and chocolate chips.
  3. In another bowl, mix peanut butter, honey or maple syrup, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until well incorporated.
  5. Shape the mixture into small balls or flatten into cookie shapes and place on the lined tray.
  6. Chill in the fridge for about 30 minutes to set.

Notes

These cookies are easy to customize with different nuts or seeds. Keep them in an airtight container in the fridge for up to a week.
