Ingredients
- Pasta (spaghetti or penne)
- Fresh Tomatoes (or canned tomatoes)
- Garlic (freshly minced)
- Fresh Basil (or dried basil)
- Olive Oil (extra virgin)
- Salt
- Pepper
- Parmesan Cheese (optional, or nutritional yeast for vegan)
Instructions
- Cook the Pasta: Boil salted water, then add pasta and cook until al dente. Reserve a cup of pasta water.
- Prepare the Sauce: Heat olive oil in a pan, add minced garlic, and sizzle for about a minute.
- Add the Tomatoes: Once garlic is golden, add chopped tomatoes and cook for about 10 minutes. Season with salt and pepper.
- Combine: Drain the pasta and add it to the sauce, using reserved pasta water to help coat the noodles.
- Finish with Basil: Stir in fresh basil leaves, remove from heat, and let flavors mingle for a couple of minutes.
- Serve: Plate the pasta, sprinkle with parmesan cheese or nutritional yeast, and garnish with basil. Enjoy!
