Description

A delightful Neapolitan Pasta recipe that brings a slice of Italy to your dinner table with fresh tomatoes, basil, and garlic.


Ingredients

  • Pasta (spaghetti or penne)
  • Fresh Tomatoes (or canned tomatoes)
  • Garlic (freshly minced)
  • Fresh Basil (or dried basil)
  • Olive Oil (extra virgin)
  • Salt
  • Pepper
  • Parmesan Cheese (optional, or nutritional yeast for vegan)


Instructions

  1. Cook the Pasta: Boil salted water, then add pasta and cook until al dente. Reserve a cup of pasta water.
  2. Prepare the Sauce: Heat olive oil in a pan, add minced garlic, and sizzle for about a minute.
  3. Add the Tomatoes: Once garlic is golden, add chopped tomatoes and cook for about 10 minutes. Season with salt and pepper.
  4. Combine: Drain the pasta and add it to the sauce, using reserved pasta water to help coat the noodles.
  5. Finish with Basil: Stir in fresh basil leaves, remove from heat, and let flavors mingle for a couple of minutes.
  6. Serve: Plate the pasta, sprinkle with parmesan cheese or nutritional yeast, and garnish with basil. Enjoy!
