Description

A heartwarming soup featuring tender chicken, aromatic herbs, and a rich, creamy broth, perfect for cozy nights in or impressing loved ones.


Ingredients

  • 1 lb boneless chicken breast
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 yellow onion, chopped
  • 2 cups fresh or frozen spinach
  • 1/2 cup Parmesan cheese, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat a bit of olive oil and sauté chopped onions and minced garlic until soft and fragrant.
  2. Add chicken breasts, seasoning with salt, pepper, and herbs. Cook until browned on both sides.
  3. Pour in chicken broth and bring to a gentle simmer, cooking for about 15 minutes until the chicken is tender.
  4. Remove the chicken, shred it, and set aside. Stir in spinach and heavy cream, thickening the soup.
  5. Add shredded chicken back into the pot and stir in Parmesan cheese until dissolved.
  6. Ladle soup into bowls, garnishing with more Parmesan and fresh herbs. Serve hot.

Notes

This soup can be made ahead and stored in the fridge. For creamier soup, add more cream and consider using thighs for richer flavor.
