- 1 cup Orzo Pasta
- 1 cup Heavy Cream

- 2 cups Spinach
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. In a large skillet, heat some olive oil over medium heat. Add the chicken and cook until golden brown, about 6-7 minutes per side. Once cooked, let rest for a few minutes, then slice.
- In the same skillet, add minced garlic and sauté for about a minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer as it thickens slightly.
- Toss in the orzo pasta, sun-dried tomatoes, and Italian seasoning. Stir and cook for about 10-12 minutes until the orzo is tender.
- Add the spinach and let it wilt. Fold in Parmesan cheese until melted and mixed in.
- Return the sliced chicken to the skillet, allowing it to warm through for a couple of minutes.
- Garnish with more cheese or fresh herbs if desired, and serve hot.
