Description

A refreshing dessert or breakfast with creamy coconut milk, sweet mango, and chia seeds.


Ingredients

  • 1 cup Chia Seeds
  • 2 cups Coconut Milk
  • 2 cups Mango (fresh or frozen)
  • 2-4 tablespoons Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract


Instructions

  1. Prepare the Mango: If using fresh mango, peel and chop into small pieces; if frozen, let it thaw slightly.
  2. Blend the Ingredients: In a blender, combine mango, coconut milk, honey (or maple syrup), and vanilla extract. Blend until smooth.
  3. Mix in Chia Seeds: Pour the mango mixture into a bowl and add chia seeds. Stir well to combine.
  4. Refrigerate: Cover and let sit in the refrigerator for at least 240 minutes or overnight to soak.
  5. Serve and Enjoy: Stir well before serving. Optional: top with extra mango or shredded coconut.

Notes

Give chia seeds a good stir after mixing to prevent clumping. Adjust sweetness as desired.
