Ingredients

  • 1 3/4 cups confectioners’ sugar
  • 3 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1/2 cup raspberry puree
  • 1/4 cup pistachio paste
  • 1/4 cup unsalted butter, softened
  • Food coloring (optional)


Instructions

  1. Line two baking sheets with parchment paper.
  2. Whip egg whites until frothy, then gradually add granulated sugar while continuing to whip until stiff peaks form.
  3. In another bowl, mix almond flour and confectioners’ sugar; sift well.
  4. Gently incorporate the dry mixture into the meringue, creating a shiny batter that slowly flows off the spatula.
  5. If using, add food coloring and pistachio paste; mix well.
  6. Transfer the batter to a piping bag and pipe little circles onto prepared sheets.
  7. Let the macarons rest at room temperature for 30-60 minutes until they form a skin.
  8. Preheat your oven to 300°F (150°C) and bake the macarons for 15–20 minutes.
  9. Let them cool on the sheets before transferring to a wire rack.
  10. Whip softened butter, pistachio paste, raspberry puree, and confectioners’ sugar until creamy.
  11. Pair macaron shells and fill with creamy filling to assemble.
