Instructions
- Line two baking sheets with parchment paper.
- Whip egg whites until frothy, then gradually add granulated sugar while continuing to whip until stiff peaks form.
- In another bowl, mix almond flour and confectioners’ sugar; sift well.
- Gently incorporate the dry mixture into the meringue, creating a shiny batter that slowly flows off the spatula.
- If using, add food coloring and pistachio paste; mix well.
- Transfer the batter to a piping bag and pipe little circles onto prepared sheets.
- Let the macarons rest at room temperature for 30-60 minutes until they form a skin.
- Preheat your oven to 300°F (150°C) and bake the macarons for 15–20 minutes.
- Let them cool on the sheets before transferring to a wire rack.
- Whip softened butter, pistachio paste, raspberry puree, and confectioners’ sugar until creamy.
- Pair macaron shells and fill with creamy filling to assemble.
