Description

A delightful twist on traditional pizza, this Low Carb Pizza Casserole is packed with flavor and comes without the crust, making it a filling and satisfying meal.


Ingredients

  • 1 pound ground beef or sausage (or turkey/chicken for a leaner option)
  • 1 cup diced bell peppers
  • 1 cup diced onion (red or yellow)
  • 1 cup low-sugar pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup sliced olives (black or green)
  • 2 teaspoons Italian seasoning


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef or sausage over medium heat.
  3. Add diced bell peppers and onion, sauté until soft (about 5 minutes).
  4. Stir in the pizza sauce and Italian seasoning, simmer for 1-2 minutes.
  5. In a casserole dish, layer half of the meat mixture, half of the cheese, and some olives. Repeat the layers ending with cheese.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
  7. Allow to cool for a few minutes before serving hot.
