Description

A delightful dessert that combines the richness of custard with the refreshing zing of lemon.


Ingredients

  • 3 large lemons (zest and juice)
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8-inch round cake pan with butter or oil and line with parchment paper.
  3. In a mixing bowl, whisk together eggs, melted butter, lemon juice, and zest until combined.
  4. In another bowl, mix flour, sugar, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring gently.
  6. Slowly incorporate the milk until smooth.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm with vanilla ice cream or chilled with whipped cream. Add fresh berries for extra flair.
