Description
A simplified, cheesy version of traditional enchiladas made by layering tortillas, savory filling, and gooey cheese with minimal fuss.
Ingredients
- Flour tortillas (or corn for gluten-free)
- Shredded chicken or ground beef (or black beans for vegetarian)
- Enchilada sauce
- Cheddar cheese (or Monterey Jack, or pepper jack)
- Sour cream (or Greek yogurt)
- Chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- Spread a bit of enchilada sauce on the bottom of a baking dish.
- Layer half of the tortillas, followed by a generous helping of shredded chicken or beef.
- Sprinkle with cheese and drizzle some enchilada sauce over that; repeat the layers until all ingredients are used.
- Cover with foil and bake for about 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Top with dollops of sour cream and chopped green onions before serving.
Notes
Don’t overload the filling; use fresh tortillas for the best taste. You can assemble the enchiladas ahead of time and bake when ready.
