Description

A simplified, cheesy version of traditional enchiladas made by layering tortillas, savory filling, and gooey cheese with minimal fuss.

Ingredients

  • Flour tortillas (or corn for gluten-free)
  • Shredded chicken or ground beef (or black beans for vegetarian)
  • Enchilada sauce
  • Cheddar cheese (or Monterey Jack, or pepper jack)
  • Sour cream (or Greek yogurt)
  • Chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread a bit of enchilada sauce on the bottom of a baking dish.
  3. Layer half of the tortillas, followed by a generous helping of shredded chicken or beef.
  4. Sprinkle with cheese and drizzle some enchilada sauce over that; repeat the layers until all ingredients are used.
  5. Cover with foil and bake for about 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  7. Top with dollops of sour cream and chopped green onions before serving.

Notes

Don’t overload the filling; use fresh tortillas for the best taste. You can assemble the enchiladas ahead of time and bake when ready.
