Description

A cozy casserole combining tender chicken, fluffy rice, and creamy sauce, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 cup long grain rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups frozen vegetables (peas or mixed veggies)
  • 1 cup cheddar cheese, shredded
  • Salt, pepper, and paprika to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine chopped chicken, cream of chicken soup, chicken broth, onion, garlic, and seasonings.
  3. Stir in the long-grain rice until evenly coated.
  4. Add frozen vegetables and mix everything together until well combined.
  5. Pour the mixture into a greased casserole dish.
  6. Cover with foil and bake for about 45 minutes.
  7. Remove the foil, add cheese on top, and bake for an additional 15 minutes until bubbly.
  8. Let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to three days. This casserole can be made ahead and frozen.
