Ingredients

- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup long grain rice
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups frozen vegetables (peas or mixed veggies)
- 1 cup cheddar cheese, shredded
- Salt, pepper, and paprika to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine chopped chicken, cream of chicken soup, chicken broth, onion, garlic, and seasonings.
- Stir in the long-grain rice until evenly coated.
- Add frozen vegetables and mix everything together until well combined.
- Pour the mixture into a greased casserole dish.
- Cover with foil and bake for about 45 minutes.
- Remove the foil, add cheese on top, and bake for an additional 15 minutes until bubbly.
- Let cool for a few minutes before serving.
Notes
Store leftovers in an airtight container for up to three days. This casserole can be made ahead and frozen.
