Description

A vibrant and easy-to-make jerk chicken bowl topped with zesty pineapple salsa, perfect for summer meals.


Ingredients

  • 4 Boneless, skinless chicken breasts
  • 2 tablespoons jerk seasoning
  • 1 cup fresh pineapple, chopped
  • 1/2 cup red onion, chopped
  • 1/4 cup cilantro, finely chopped
  • 2 tablespoons lime juice, freshly squeezed
  • 2 cups cooked rice (white or brown)


Instructions

  1. Marinate the chicken by combining it with jerk seasoning in a bowl and letting it sit for at least 30 minutes.
  2. Grill or pan-sear the chicken on medium-high heat until cooked through, around 6-7 minutes per side.
  3. Prepare the pineapple salsa by mixing chopped pineapple, red onion, cilantro, and lime juice in a bowl. Season with salt to taste.
  4. Cook rice according to package instructions.
  5. Assemble the bowl by layering rice, sliced jerk chicken, and spooning pineapple salsa on top.

Notes

For added flavor, marinate the chicken longer or serve with avocado slices and lime wedges.
