- Chicken breast or thighs, boneless and skinless
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 8 ounces egg noodles
- Salt, to taste
- Pepper, to taste
- Dried thyme, to taste
- Dried parsley, to taste
Instructions
- Sauté the veggies: In a large pot, heat some olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until they start to soften.
- Add garlic: Toss in the minced garlic and cook for another minute until fragrant.
- Cook the chicken: Pour in the chicken broth and bring to a simmer. Add your chicken breasts or thighs and let them cook until no longer pink in the center (about 15-20 minutes).
- Shred the chicken: Once cooked, remove the chicken from the pot, shred with forks, and return it to the soup.
- Add noodles and seasoning: Stir in the noodles and seasonings. Let it simmer for 10-12 minutes until noodles are tender.
- Serve: Enjoy your warm bowl with a sprinkle of fresh parsley!
Notes
For added flavor, use fresh herbs and try roasting the chicken beforehand. Avoid overcooking the noodles, and freeze the soup without noodles for better storage.
