Description

A comforting bowl of homemade chicken noodle soup, perfect for cozy nights and cold days.


Ingredients

  • Chicken breast or thighs, boneless and skinless
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 8 ounces egg noodles
  • Salt, to taste
  • Pepper, to taste
  • Dried thyme, to taste
  • Dried parsley, to taste


Instructions

  1. Sauté the veggies: In a large pot, heat some olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until they start to soften.
  2. Add garlic: Toss in the minced garlic and cook for another minute until fragrant.
  3. Cook the chicken: Pour in the chicken broth and bring to a simmer. Add your chicken breasts or thighs and let them cook until no longer pink in the center (about 15-20 minutes).
  4. Shred the chicken: Once cooked, remove the chicken from the pot, shred with forks, and return it to the soup.
  5. Add noodles and seasoning: Stir in the noodles and seasonings. Let it simmer for 10-12 minutes until noodles are tender.
  6. Serve: Enjoy your warm bowl with a sprinkle of fresh parsley!

Notes

For added flavor, use fresh herbs and try roasting the chicken beforehand. Avoid overcooking the noodles, and freeze the soup without noodles for better storage.
