Description

A comforting homemade chicken noodle soup filled with tender chicken, fresh vegetables, and hearty noodles in a fragrant broth.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups egg noodles (or rice noodles)
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1/4 cup fresh parsley, chopped
  • Olive oil
  • Salt and pepper to taste


Instructions

  1. Prep the Ingredients: Chop the carrots, celery, onion, and garlic.
  2. Cook the Chicken: In a large pot, heat a splash of olive oil over medium heat. Add the chicken, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.
  3. Sauté the Vegetables: In the same pot, add onions, carrots, and celery. Cook until softened, about 4-5 minutes, then add garlic and cook for another minute.
  4. Add the Broth: Pour in the chicken broth and bring to a gentle simmer.
  5. Back to the Chicken: Shred the cooked chicken and return it to the pot.
  6. Add the Noodles: Stir in the noodles and let everything simmer together for about 8-10 minutes, until the noodles are cooked through.
  7. Finish with Herbs: Stir in freshly chopped parsley and thyme.
  8. Serve and Enjoy: Ladle the soup into bowls and enjoy.

Adjust the broth consistency to your liking, and consider cooking noodles separately for leftovers to avoid sogginess.
