- 1 lb boneless, skinless chicken breasts
- 2 cups egg noodles (or rice noodles)
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 tbsp fresh thyme (or 1 tsp dried)
- 1/4 cup fresh parsley, chopped
- Olive oil
- Salt and pepper to taste
Instructions
- Prep the Ingredients: Chop the carrots, celery, onion, and garlic.
- Cook the Chicken: In a large pot, heat a splash of olive oil over medium heat. Add the chicken, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.
- Sauté the Vegetables: In the same pot, add onions, carrots, and celery. Cook until softened, about 4-5 minutes, then add garlic and cook for another minute.
- Add the Broth: Pour in the chicken broth and bring to a gentle simmer.
- Back to the Chicken: Shred the cooked chicken and return it to the pot.
- Add the Noodles: Stir in the noodles and let everything simmer together for about 8-10 minutes, until the noodles are cooked through.
- Finish with Herbs: Stir in freshly chopped parsley and thyme.
- Serve and Enjoy: Ladle the soup into bowls and enjoy.

Adjust the broth consistency to your liking, and consider cooking noodles separately for leftovers to avoid sogginess.
