Description

A comforting one-pot wonder, hobo casserole combines ground beef, potatoes, and vegetables in a creamy sauce for a hearty meal.


Ingredients

  • 1 lb ground beef
  • 3 cups diced russet potatoes
  • 1 cup diced onion
  • 1 cup sliced carrots
  • 1 cup green beans (fresh or frozen)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese


Instructions

  1. In a large pot, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  2. Toss in diced onion and sliced carrots, cooking until softened, about 5-7 minutes.
  3. Stir in diced potatoes and green beans, mixing well.
  4. Pour in the cream of mushroom soup, stirring until everything is nicely coated. Add salt and pepper to taste.
  5. Cover the pot and let it simmer over low heat for about 30-40 minutes, stirring occasionally until the potatoes are tender.
  6. Sprinkle cheese on top, cover again, and let it melt before serving.
