- 1 lb ground beef
- 3 cups diced russet potatoes
- 1 cup diced onion
- 1 cup sliced carrots
- 1 cup green beans (fresh or frozen)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
Instructions
- In a large pot, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Toss in diced onion and sliced carrots, cooking until softened, about 5-7 minutes.
- Stir in diced potatoes and green beans, mixing well.
- Pour in the cream of mushroom soup, stirring until everything is nicely coated. Add salt and pepper to taste.
- Cover the pot and let it simmer over low heat for about 30-40 minutes, stirring occasionally until the potatoes are tender.
- Sprinkle cheese on top, cover again, and let it melt before serving.
