Description

A comforting and flavorful soup packed with lentils, vegetables, and spices, perfect for chilly nights.


Ingredients

Scale
  • 1 cup green or brown lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 bay leaves
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Cook until soft, about 5-7 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add lentils, cumin, paprika, salt, and pepper. Stir well to coat everything.
  4. Pour in the vegetable broth and add canned tomatoes. Stir and bring to a boil.
  5. Once boiling, reduce heat and let simmer uncovered for about 30-35 minutes, or until lentils are tender.
  6. Taste and adjust seasonings if needed. Remove bay leaves before serving.
  7. Serve warm, optionally with crusty bread or over steamed rice.
