Ingredients

- 1 cup green or brown lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 bay leaves
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Cook until soft, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add lentils, cumin, paprika, salt, and pepper. Stir well to coat everything.
- Pour in the vegetable broth and add canned tomatoes. Stir and bring to a boil.
- Once boiling, reduce heat and let simmer uncovered for about 30-35 minutes, or until lentils are tender.
- Taste and adjust seasonings if needed. Remove bay leaves before serving.
- Serve warm, optionally with crusty bread or over steamed rice.
