Ingredients

  • 1.5 lbs Boneless Skinless Chicken
  • 2 large Carrots, chopped
  • 2 stalks Celery, chopped
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 2 medium Potatoes, diced
  • 6 cups Chicken Broth
  • Fresh or dried Herbs (Thyme and Bay Leaf)
  • 1 cup Flour (whole wheat or gluten-free)
  • 1 tbsp Baking Powder
  • Salt and Pepper to taste


Instructions

  1. In a large pot, add the chicken, cover it with chicken broth, and bring it to a boil. Lower the heat and simmer until cooked through, about 20-25 minutes.
  2. Remove the chicken, and in the same pot, add onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until they start to soften.
  3. Shred the chicken once it’s cooled down and return it to the pot along with potatoes, thyme, and bay leaf. Season with salt and pepper.
  4. In a bowl, combine flour, baking powder, and a pinch of salt. Add water gradually until the mixture is doughy but not sticky.
  5. Drop spoonfuls of the dough into the simmering soup. Let them cook for about 10-15 minutes until they puff up and cook through.
  6. Discard the bay leaf, give everything a gentle stir, ladle your soup into bowls, and enjoy the warmth!

Notes

For added flavor, use homemade chicken broth. Add extra veggies like peas or corn for more nutrients. If you want a creamy texture, stir in a splash of heavy cream just before serving.
