Description

Soft, fluffy muffins with zucchini, oats, and a touch of sweetness, perfect for breakfast or a snack.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup fresh grated zucchini
  • 1 ripe banana, mashed
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, combine oats, cinnamon, baking powder, baking soda, and salt.
  4. In another bowl, mix the mashed banana, grated zucchini, honey or maple syrup, and eggs until smooth.
  5. Combine wet and dry ingredients, stirring until just mixed.
  6. Spoon the mixture into a muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before transferring to a wire rack.

Notes

For added texture, consider adding walnuts or chia seeds. These muffins freeze well for future enjoyment.
