Description
Juicy chicken, succulent pineapple, and vibrant bell peppers come together in these delicious Hawaiian chicken pineapple kebabs, perfect for summer grilling.
Ingredients
Scale
- 1.5 pounds boneless, skinless chicken breast
- 1 cup pineapple chunks
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 teaspoon garlic powder
- 1/2 teaspoon ginger powder
- 2 tablespoons olive oil
Instructions
- In a mixing bowl, combine soy sauce, honey, garlic powder, ginger powder, and olive oil. Whisk until well-blended.
- Cut chicken into bite-sized cubes and place in a resealable bag. Pour marinade over the chicken and ensure all pieces are coated. Let marinate for at least 30 minutes, or up to 4 hours.
- Soak wooden skewers in water to prevent burning. Alternate skewering chicken, pineapple, and bell pepper pieces.
- Preheat grill to medium-high heat. Grill kebabs for about 10-12 minutes, turning occasionally, until chicken is cooked through and veggies are slightly charred.
- Remove from grill and let rest for a few minutes before serving.
Notes
For an extra flavor boost, mix in shrimp for a surf-and-turf vibe, and allow chicken to marinate longer for enhanced taste. Keep an eye on grilling time to prevent burning.
