Description

Juicy chicken, succulent pineapple, and vibrant bell peppers come together in these delicious Hawaiian chicken pineapple kebabs, perfect for summer grilling.


Ingredients

  • 1.5 pounds boneless, skinless chicken breast
  • 1 cup pineapple chunks
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 2 tablespoons olive oil


Instructions

  1. In a mixing bowl, combine soy sauce, honey, garlic powder, ginger powder, and olive oil. Whisk until well-blended.
  2. Cut chicken into bite-sized cubes and place in a resealable bag. Pour marinade over the chicken and ensure all pieces are coated. Let marinate for at least 30 minutes, or up to 4 hours.
  3. Soak wooden skewers in water to prevent burning. Alternate skewering chicken, pineapple, and bell pepper pieces.
  4. Preheat grill to medium-high heat. Grill kebabs for about 10-12 minutes, turning occasionally, until chicken is cooked through and veggies are slightly charred.
  5. Remove from grill and let rest for a few minutes before serving.
