- Ground meat (lamb or beef, or chicken)
- 1 onion, finely chopped
- 1/2 cup pine nuts
- 1 cup short-grain rice (preferably basmati)
- Spices: cinnamon, allspice, nutmeg
- 2 cups chicken broth (or vegetable broth)
- 2 tablespoons olive oil
Instructions
- Rinse rice under cold water until the water runs clear. Soak for 30 minutes, then drain.
- In a large pan, heat olive oil over medium heat. Add chopped onions and sauté until golden brown.
- Add ground meat to the pan and cook until browned, breaking it up as it cooks. Season with salt, pepper, and spices.
- Add the pine nuts and toast them lightly.
- Add soaked rice to the meat mixture, stir, and pour in the chicken broth. Bring to a simmer, cover, and reduce heat. Cook for about 20 minutes until rice is tender.
- Fluff rice with a fork before serving warm.
