Ingredients

  • 8 ounces lo mein noodles
  • 1 cup bell peppers, chopped
  • 1 cup carrots, sliced
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green onions, sliced


Instructions

  1. Boil water in a pot and cook the lo mein noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat a drizzle of oil over medium-high heat and brown the ground beef, breaking it apart.
  3. Add minced garlic and ginger, cooking for about 1 minute until fragrant.
  4. Stir in the chopped bell peppers, carrots, and snap peas, cooking for 3-4 minutes until tender.
  5. Toss in the cooked noodles along with soy sauce and sesame oil, mixing until everything is coated and heated through.
  6. Plate and sprinkle with green onions before serving.

Notes

For added flavor, you can substitute ground beef with turkey or tofu. Adjust vegetables based on availability.
